Middle of the Night Breakfast Tacos

As a cocktail waitress, I typically end up stumbling in around 3 a.m. and tend to cook pretty easy things for the (seemingly forever ravenous) boyfriend when I get home... since I'm usually half drunk and exhausted. :3 here's the easiest go-to recipe I know, with ingredients that are usually on hand or easily accessible. Cheaper than Whataburger. You dig? 

For the eggs:
4 eggs, scrambled with fork and seasoned with tony chachere, pepper, etc
1 slice cheese
3-5 slices ham, depending on how much meat you like in your breakfast burritos
4 tortillas

for the potatoes:
1 medium-size potato, diced into small pieces
seasonings (i use garlic, tony chachere, chili powder, salt/pepper)
about 1 tbsp vegetable oil
a little butter/margarine

Heat skillet over medium-high heat. Add oil/butter, then potatoes. Season, stir occasionally until tender. Cover them towards the end, the steaming helps to soften them.

Scramble eggs/cheese/ham in a separate skillet. Heat tortillas in the microwave for 30-45 seconds until soft. Top with egg mixture, potatoes, and salsa/sour cream (the boyfriend used 2 ketchup packets from Burger King for his). OMNOMNOMNOMNOM MIDNIGHT MUNCHIES

Makes around 4-6 tacos depending on size of tortillas/how hungry you are.
